"El Pacto" is a project dedicated to preserving the ancestral viticulture of the Alto Najerilla valley. This wine is a tribute to the traditional, almost forgotten methods of the region, focusing on preserving ancient vines and utilizing minimal intervention. It represents a deep commitment to the land and a profound return to the roots of authentic winemaking.
Terroir: The grapes are sourced from small, ancient plots (many over 70 years old) in the Alto Najerilla, one of the coolest and highest elevation zones in the region. The old vines are deeply rooted in poor, ferrous clay and calcareous soils. This high-altitude, cool-climate terroir is crucial for maintaining the grapes' vibrant natural acidity and developing a fresh, highly focused aromatic profile.
Style: A Viura and Malvasía dominant white style, harvested from old vineyards where multiple native white grape varieties were historically planted together.
Vinification: The winemaking honors tradition with minimal interference. After a careful hand-harvest, the grapes are gently pressed, and the must ferments spontaneously with native yeasts. The wine is then aged for approximately 8 to 10 months on its fine lees in large oak foudres and barrels.
