Christian Collovray and Jean-Luc Terrier are renowned for their mastery of Chardonnay in Burgundy (Mâconnais), but their adventurous spirit led them south to the foothills of the Pyrenees. They acquired Château d'Altugnac in the Haute-Vallée de l'Aude because they recognized a "Burgundian" potential in its cool, high-altitude terroir. Limoux is historically claimed as the birthplace of sparkling wine, and this cuvée honors that heritage. By applying their rigorous Burgundian vinification methods to these southern slopes, they create a bubble that defies the heat of the Languedoc, offering precision and alpine freshness.

Terroir: Vines are planted at high altitudes (up to 500 meters) on clay-limestone slopes, benefiting from cooler temperatures that allow the grapes to ripen slowly and retain the high acidity crucial for quality sparkling wine.

Style: A refined and airy sparkling wine that balances the structure and elegance of Chardonnay and Chenin Blanc with the local rustic character of Mauzac and the subtle red-fruit roundness of Pinot Noir.

Vinification: Made using the Méthode Traditionnelle. The wine is aged on its lees in the cool cellars for at least 12 to 15 months to develop complexity and a fine, persistent mousse.


Tasting Notes

Appearance: A pale, brilliant yellow with green reflections, animated by a column of very fine, persistent bubbles.

Nose: Fresh and spring-like. It opens with delicate aromas of white flowers (acacia, hawthorn) and green apple, evolving into notes of citrus zest and a hint of fresh hazelnut or brioche from the lees aging.

Palate: Crisp and invigorating. The attack is lively with a creamy effervescence that feels gentle on the palate. Flavors of pear and lemon mingle with a distinct limestone minerality, leading to a clean, dry, and refreshing finish.
