Chardonnay is the grape that connects the Delaunay family's past with their present. With "La Cour des Dames" they aim to prove that the South of France can produce Chardonnays that rival the elegance of the north, provided the sourcing is precise. This 2024 cuvée is a success in blending different micro-climates. It avoids the heaviness often found in warm-climate whites by sourcing grapes from cooler, high-altitude vineyards to maintain acidity, while using fruit from the warmer plains to ensure the rich, comforting texture that Chardonnay lovers adore.
Terroir: A strategic mix of vineyards: the fruit from the high valley of the Aude provides freshness and structure, while grapes from the Hérault plains contribute richness and tropical notes.
Style: A generous and textured white wine that harmonizes the sun-ripened abundance of Southern Chardonnay with the elegance and subtle toasted notes characteristic of the Delaunay family's Burgundian heritage.
Vinification: The wine is fermented primarily in stainless steel to preserve fruit purity. However, about 30% of the blend is fermented and aged in oak barrels, followed by aging on the lees, which imparts a creamy mouthfeel and complex buttery nuances.
