Baillot has joined forces with his wife Laure, granddaughter of Domaine Hudelot-Noëllat in Chambolle-Musigny, to create an exceptional range of village and cru-level Burgundy wines. Arnaud has remained closely involved throughout the entire process: from selecting the grape origins and overseeing vinification, to choosing barrel types and determining the ideal ageing for each individual cuvée.
In 2017, Arnaud and Laure took a major step forward by acquiring a small vineyard in the Côte de Beaune, marking the beginning of their own estate-produced wines under the Domaine Arnaud Baillot label. Their guiding philosophy is to honour and highlight the complexity of the Burgundy region through the production of authentic, terroir-driven wines.
Today, they proudly unveil the fourth vintage of their limited-edition, small-batch Burgundy crus.
Climate: Continental climate with slightly higher temperatures and rainfall
Terroir: Vineyard is located in Meursault, at the centre of the four towns that are part of the Cote de Beaune known as the Cote des Blancs. Meursault’s vineyard is the most extensive of the Cote de Beaune, where approximately 30 percent are premier crus and 70 percent are village vineyards
Ageing: Sustainable agriculture. Manual harvesting with grape sorting and parcel-by-parcel ripeness monitoring. Fermentation in oak barrels and aged for 12 months in Burgundy oak (25% new oak). Bottled unfiltered
