As the summers in Burgundy grow hotter, the Hautes Côtes (High Slopes) have transformed from a modest hinterland into the region's most exciting frontier for freshness. Arnaud Baillot, with his keen eye for micro-terroirs, champions this appellation as the "secret garden" of the Côte de Beaune. Located on a plateau just behind the famous hills of Pommard and Volnay, these vineyards sit at a higher altitude, enjoying cooler temperatures that allow the grapes to mature slowly. This 2024 cuvée is a testament to that elevation, offering a crystalline purity and tension that is becoming harder to find in the valley below. It is a Burgundy for purists: unadorned, precise, and vibrating with energy.
Terroir: Vines planted on sun-drenched, south-facing slopes at roughly 400 meters altitude. The soil is a mix of clay and hard limestone, providing the wine with a flinty, "steely" backbone.
Style: A vibrant and chiseled white wine that showcases the Chardonnay grape in its most energetic form, balancing a nervy acidity with the natural texture derived from careful winemaking.
Vinification: Gentle pressing followed by fermentation in French oak barrels (with a small percentage of new oak). The wine is aged for approximately 12 months to soften the edges and add a touch of hazelnut complexity without masking the mineral drive.
