Clover Hill is one of Australia’s very few premium sparkling houses solely producing sparkling wines in the traditional method. We have adopted an anchoring multi-vintage philosophy: a single-minded dedication to crafting wines of perennial consistency and complexity. Clover Hill was founded in 1986 in Lebrina, Pipers River in north-east Tasmania. We selected this unique site for its ancient volcanic soils ( deep, red volcanic ‘krasnozem’ soil), cool maritime climate and sheltered, north-facing amphitheatre. This results in a long ripening season, allowing superior flavour development, low sugar levels and high natural acidity: the perfect combination for premium wine in traditional sparkling varieties – Chardonnay, Pinot Noir and Pinot Meunier.
