The Pascal Machet estate, located in the premier cru village of Vaudemange on the eastern edge of the Montagne de Reims, is a dedicated, family-run grower Champagne house. The "Extra Brut" cuvée is a pure, unadulterated expression of their vineyards, designed for those who seek absolute precision and a profile completely unmasked by added sugars.

Terroir: The grapes are meticulously sourced from the family's carefully tended vineyards across the Montagne de Reims. The vines are deeply rooted in the region's signature chalk and clay-limestone soils. This specific geology is essential for regulating moisture and reflecting sunlight, imparting a piercing mineral tension and a vibrant, energetic freshness to the fruit that shines through brilliantly in a low-dosage format.

Style: A classic Champagne style that harmoniously brings together the region's traditional noble grapes Pinot Noir, Pinot Meunier and Chardonnay.

Vinification: The winemaking focuses on absolute purity. Following a careful manual harvest, the grapes are gently pressed, and the initial alcoholic fermentation occurs in temperature-controlled vats. The wine then undergoes its secondary fermentation in the bottle, aging patiently on its fine lees in the estate's cellars. Crucially, it is finished with a very minimal dosage, resulting in a bone-dry wine that relies entirely on the natural ripeness of the fruit and the complexity gained from the yeast contact.

Appearance: A bright, luminous pale golden yellow hue accompanied by a lively, very fine, and persistent stream of bubbles.

Nose: Highly focused, pure, and intensely mineral. It opens with sharp, vibrant primary aromas of tart green apple, fresh lemon zest, and white flowers. As it breathes, the lees aging reveals subtle, elegant layers of raw almond, crushed chalk, and a delicate hint of fresh sourdough.

Palate: Bone-dry, electric, and beautifully precise. The attack is razor-sharp and zesty, driven by the bright, unmasked acidity inherent to the terroir. It reveals a highly focused, linear texture on the mid-palate, delivering pure flavors of crisp orchard fruit and tart citrus perfectly supported by a striking, clean chalky minerality. The finish is remarkably long, fiercely dry, and elegantly thirst-quenching.
