"El Pacto" represents a deep commitment to preserving the ancestral viticulture of the Alto Najerilla valley. The "Ojo Gallo" (Rooster's Eye) is a beautiful homage to a historical, nearly forgotten tradition of the region. It revives the ancient practice of harvesting and co-fermenting red and white grapes directly from the same old-vine plots, resulting in a vibrant, light red wine that perfectly captures the rustic elegance of the land.
Terroir: The fruit is sourced from ancient, low-yielding vineyards located in the village of Cárdenas, within the cool, high-altitude Alto Najerilla zone. The deeply rooted vines sit in poor, ferrous clay soils. This specific microclimate is vital for retaining a sharp natural acidity and an energetic, fresh fruit profile.
Style: A traditional co-fermented red and white style, primarily featuring Garnacha and Viura.
Vinification: Crafted with minimal intervention to honor traditional methods. Following a manual harvest, the red and white grapes are gently crushed and co-fermented spontaneously using indigenous yeasts. The wine then matures in large oak foudres for approximately 8 to 10 months.
