About The Winery
Country: France
Region: Burgundy
Domaine Deux Roches is a highly respected estate led by the Collovray and Terrier families, deeply rooted in the Mâconnais region of Burgundy. The "Sur le Fil" cuvée is their wonderfully balanced, vibrant expression of the La Roche-Vineuse village. It is crafted to perfectly capture the lively energy, pure sunshine, and rich fruit character of the vintage, delivering immediate pleasure while staying exceptionally true to its precise terroir.
Terroir: The grapes are meticulously sourced from the specific village appellation of La Roche-Vineuse (a name that translates to "the vinous rock"). The vineyards are firmly rooted in shallow, stony, clay-limestone soils. This exceptional terroir is essential for producing grapes with generous, ripe fruit flavors, while the limestone bedrock imparts a distinct, underlying mineral tension.
Style: This is a classic 100% Chardonnay style.
Vinification: The winemaking focuses entirely on preserving the purity of the primary fruit and the crisp energy of the terroir. Following a careful harvest, the juice undergoes a slow fermentation. The wine is then aged for approximately 7 to 8 months primarily in temperature-controlled stainless steel vats before bottling. This precise maturation process builds a beautifully rich, juicy texture while completely avoiding heavy oak influence, ensuring the floral and fruit aromas remain vibrant and untouched
