"Les Turitelles" is a cuvée that literally speaks of the land it comes from. The name refers to the abundant spiral-shaped fossils found scattered throughout the vineyard soils, remnants of a time when this high-altitude plateau was covered by the sea. Crafted by the Burgundian duo Collovray & Terrier at their southern estate in the Haute-Vallée de l'Aude, this wine is a masterclass in adaptation. They apply their Mâconnais expertise to the sunny Languedoc, utilizing the natural coolness of the Pyrenean foothills to produce a Chardonnay that defies the region's heat, offering a crispness usually reserved for wines much further north.

Terroir: Vineyards planted between 300 and 500 meters above sea level on clay-limestone soils rich in fossilized shells, which impart a distinct saline signature to the wine.

Style: A pure and energetic white wine that balances the sun-ripened fruitiness of southern Chardonnay with a tension and mineral salinity reminiscent of its fossil-rich origins.

Vinification: Fermented and aged primarily in stainless steel tanks to preserve the "crunchiness" of the fresh fruit and the tension of the terroir, avoiding heavy oak influence.

Tasting Notes

Appearance: A pale, luminous lemon yellow with silver highlights.

Nose: Fresh and precise. The bouquet leads with bright citrus notes and green apple, underpinned by a chalky minerality and a hint of white blossom.

Palate: Lively and thirst-quenching. The attack is sharp and clean, revealing flavors of white peach and fresh almond. The mid-palate offers a nice texture without being heavy, finishing with a lingering, salty kick drawn from the limestone soil.
